Ms. Juliet C. Guieb, member of the Cagayan Valley Cacao Industry Development Council and Manager of H&J Integrated Farm, successfully completed the 1st Cacao Graded Intensive Course in the Philippines conducted on August 22-24, 2018. This feat was achieved by the entrepreneur for free through the coordination of the Department of Trade and Industry (DTI) – Region 02 with SGS Philippines Inc., the company conducting the course.
The training course, which is a prerequisite for examinations in cacao grading certification, was a combination of in-depth lectures and intensive hands-on training which aimed to enable the participants to evaluate fine cacao and chocolate quality using research-based techniques.
Among the topics discussed were the following: history and culture of fine cacao and chocolate, genetics and agronomy of fine cacao and chocolate quality, post-harvest processing, storage and transport, chocolate making, sensory analysis and a lot more, including, social and environmental responsibility, certifications and models of success.
Mr. Colin Gasko, Founder and President of Rogue Chocolateir from Massachusetts and Ms. Carla D. Martin, PhD, founder and executive director of the Fine Cacao and Chocolate Institute (FCCI) were tapped as Resource Speakers during the 3-day training course.
The participants had various hands-on trainings to develop their skills in raw cacao evaluation, cut test, cacao sample protocol and preparation, cacao sample organoleptic evaluation, sensory analysis techniques and exercises, development of sensory lexicon and tasting and evaluation chocolate liquor and finished chocolate.
Ms. Guieb, who hails from the municipality of San Agustin in Isabela province, recently launched her cacao products with the brand “Hilario’s” during the 3rd Cacao Business Forum on August 17, 2018 in Tuguegarao City. With this training course, it is most certain that Ms. Guieb will bring to market better quality cacao products.
